Salad!!! It's one of those things that can be so good for you or so, so terrible for you. I love a good salad but it is easy to go overboard on fatty dressing and toppings. Most bottled dressings have sugar, saturated fats and preservatives - all things that I am trying to avoid. Thankfully it's not too hard to make your own dressing, especially if you use a blender. This recipe is one of my favorites!
Chickpea Salad Dressing serves 2 - 6, depending on how much you love salad!
Ingredients:
Directions:
Place all ingredients into your blender's jar or cup. Blend all ingredients together until completely smooth. I use this Cuisinart Immersion Hand Blender
You can also make this ahead and let it sit in the fridge so that the ingredients meld together but I usually use it right away. My sons like it so much they try to eat it from the container :P.

These are all of the organic chickpeas that I had leftover from one can - you can put them in your salad or save them for another dish! I like to use extras make chickpea "tuna" salad sandwiches. |
